Aine eesmärk on arendada üliõpilaste teoreetilisi teadmisi ja praktilisi oskusi veega seotud toidutoorme ning -toodete mikrobioloogia valdkonnas. Aine raames õpitakse tundma mikroorganisme ning tegureid, mis mõjutavad mikrobioloogiliselt kvaliteetsete kala- jt meretoodete käitlemist, valmistamist ning säilitamist.

The aim of this course is to develop students' theoretical knowledge and practical skills in the field of microbiology of seafood raw materials and fishery products. During the course students get to know microorganisms and factors that affect the handling, preparation and storage of microbiologically high-quality fish and fishery products.

Õppeaine läbinud üliõpilane:
- nimetab olulisi mikroobide rühmi ja liike veega seotud toidutoormes ning -toodetes;
- selgitab mikroobide rolli toidu, sh kala- jt meretoodete valmistamisel;
- analüüsib tehnoloogiliste protsesside mõju toote mikrobiootale ja selle reguleerimisvõimalusi;
- rakendab peamisi klassikalise mikrobioloogia meetodeid ja tõlgendab mikrobioloogilise analüüsi tulemusi;
- hindab mikroobide osa kala- jt meretoodete kvaliteedi kujunemisel ning säilitamisel ja on teadlik ka mikroobidega seotud ohtudest toidus.

After completing the course the student:
- defines important microbial groups and species in water-related food materials and products;
- explains the role of microbes in the production of food (including fish and other seafood);
- analyzes the impact of technological processes on the product's microbiota and its regulation possibilities;
- applies the basic methods of classical microbiology and knows how to interpret the results of microbiological analysis;
- evaluates the role of microbes in the development and maintenance of the quality of fish and other seafood products and is also aware of the risks associated with microbes in food.

Kursusel käsitletakse järgmisi teemasid:
- ülevaade mikrobioloogia ja toidu mikrobioloogia arengust ja ajaloost;
- mikroorganismide taksonoomia, morfoloogia ja paljunemine toidus ning selle hindamismeetodid;
- mikroobide roll toidu tootmisel ja töötlemisel;
- toidu töötlemistehnoloogiate mõju mikroobidele (toidu säilitamine);
- vesikeskkonnast tulenev mikrobioota;
- värske ja töödeldud kala ning meretoodete riknemine;
- kala ja meretoodete mikrobioloogilise kvaliteedi hindamine;
- mikroobide loendamine ja isoleerimis- ning samastamismeetodid.

Õpe on kombinatsioon teooriast ja praktilisest tegevusest laboris, koos erialase teaduskirjanduse lugemise, analüüsi ja esitlemisega nii suuliselt kui kirjalikult.

The following topics will be discussed:
- overview of microbiology and food microbiology development and history;
- taxonomy, morphology and reproduction of microbes in food and methods for its evaluation;
- the role of microbes in food production and processing;
- effects of food processing technologies on microbes (food preservation);
- aquatic microbiota;
- spoilage of fresh and processed fish and seafood;
- microbiological quality assessment of fish and seafood;
- microbial enumeration and isolation and identification methods.

The study is a combination of theory and practical activities in the laboratory, with reading, analysis and presentation of professional scientific literature.
