Toiduainete kvaliteet: määratlus, õigusalused, standardimine, mõõtmisvead, usaldatavus. Toiduainete ühtne kontrollsüsteem. Toiduainete tehnokeemiline üldanalüüs: kuivaine ja niiskusesisaldus, happesus, mineraalained ja tuhasus, süsivesikud, valgud, rasvad, etüülalkohol. Toiduainete valmistamisel kasutatavad lisaained ja nende määramine. Toiduainete instrumentaalanalüüs. Toidu analüüsi arengusuunad.

General information: introduction to food analyses, governmental regulations and international standards related to food analyses.

Evaluation of analytical data, sampling and sample preparation. Basic food analyses: dry matter, humidity and acidity. Methods for determination of the minerals and ash content. Chemical methods for determination of saccharides, proteins, fats, sodium chloride, ethanol. Different instrumental analysis methods: spectroscopy, chromatography, automatic detection systems.

Kursus lõpeb kirjaliku eksamiga, mis hõlmab kogu kursuse teoreetilist materjali. Eksamile pääsemise eeldusteks on laboratoorsete tööde arvestus, mis sisaldab praktikumide edukat sooritamist, korrektselt vormistatud katseprotokollide esitamist tööde kohta ja tööde kaitsmist (iga praktilise töö kohta esitatud küsimustele vastamist) ning kursuse vältel individuaalselt koostatud referaat ja selle ettekandmine. Eksamihinnet mõjutab vastus eksamipiletis esitatud referaatide temaatikaga seotud küsimusele.

Subject ends with writing exam which includes all theoretical material from lectures and excercises from excercisal lectures. There are two control tests for students: mid-semester control test and final control test. If these are performed on grades 4 (very good) and 5 (excellent) and examination prerequisites are fulfilled, taking the writing exam is optional.
