Biotehnoloogia ajalugu ja tänapäev. Näited traditsioonilistest ja uudsetest biotehnoloogilistest protsessidest. Ensümaatilised, mikroobsed ja geenitehnoloogilised protsessid. Ensüümid, nende klassifikatsioon, ning omadused - ensüümikineetika alused. Toiduensüümid, nende päritolu, omadused, kasutamine ja tootmine. Juuretised - nende roll toiduainete tööstuses ja nende tootmine. Fermentaatorid ja fermetatsiooniprotsessid. Batch, fed-batch ja pidev kultiveerimine. Kasvu erikiirus ja saagised. Mikroobide kasvu mudelid. Tahke- ja vedelfaasilised toidufermentatsioonid. Idamaised toidufermentatsioonid. Toidu biotehnoloogia ja keskkond. Geneetiliselt modifitseeritud toit, selle ohutus ja selle tulevik.

History of biotechnoplogy. Examples of traditional and novel biotechnological processes. Enzymatic and microbial processes. Gene technology. Enzymes, classification and properties - principles of enzyme kinetics. Food enzymes, occurrence, applications and production. Starter cultures - role in food processing. Fermentors and fermentation processes. Batch, fed-batch and continuous cultures. Specific growth rates and yields. Environmental aspects of food fermentations. Solid phase and submerged food fermentations. Oriental food fermentations. Environmental aspects of food biotechnology. Genetically modified food and its prospects.
