Toitumise biokeemia eesmärk on selgitada inimese toitumise füsioloogilisi aspekte läbi biokeemia vaatepunkti. Selleks läbitakse toidu ringkäik, alustades seedetraktist, kus toimub makrotoitainete lagundamine ja imendumine ning saadud ühendite rakus kasutamiseni. Vaadeldakse organismi erinevate seisundite (aktiivne, passiivne) ja energia tarbimise seoseid; samuti vee, soolade ja mikrotoitainete (vitamiinid, mineraalid) kasutamist.

The aim of nutritional biochemistry is to explain the physiological aspects of human nutrition from the perspective of biochemistry. This involves tracing the journey of food, starting from the digestive tract where the breakdown and absorption of macronutrients occur, leading to their utilization within cells. The connections between various states of the body (active, passive) and energy consumption are observed, as well as the utilization of water, salts, and micronutrients (vitamins, minerals).

Õppeaine läbinud üliõpilane:
- saab aru toitumise füsioloogilistest alustest;
- teab seedimise füsioloogiat, seedeelundkonna peamisi organeid, nende tähtsamaid funktsioone ja üldist ehitust; makrotoitainete (lipiidid, süsivesikud, valgud) lagundamist, imendumist ja nende metaboolseid radu ka raku tasandil; energia tarvet organismi erinevates seisundites, selle mõõtmise viise; vee, soolade ja mikrotoitainete kasutamist organismi poolt.

After completing this course, the student:
- understands the physiological foundations of nutrition;
- the physiology of digestion, the main organs of the digestive system, their essential functions, and general structure; the breakdown and absorption of macronutrients (lipids, carbohydrates, proteins), their metabolic pathways at the cellular level; energy requirements in different states of the body, methods of its measurement; the utilization of water, salts, and micronutrients by the organism.

Seedetrakti ja seedeelundite üldiseloomustus ja ehitus. Makrotoitainete (süsivesikud ja kiudained, lipiidid, valgud) üldine iseloomustus, allikad, lagundamine seedetraktis ning imendumise mehhanismid. Energia tootmine rakus. Metabolismi integratsioon ja regulatsioon kudede ja organite vahel. Energia tarve ja keha koostis, füüsilise aktiivsuse mõju. Vesi ja elektrolüüdid, söögiisu ja janu regulatsioon. Mikrotoitainete (vitamiinid, mineraalid) vajadus, imendumise iseärasused ja leidumine toidus.
Üliõpilased teevad kursuse jooksul ettekande aktuaalsel toitumisalasel teemal.
Praktikumides viiakse läbi juhendaja valikul kaks praktilist tööd: toiduaine rasvahappelise koostise määramine; kofeiini sisalduse määramine tees või seedeensüümide töö kiiruse määramine.

Overview and structure of the digestive tract and digestive organs. General characteristics, sources, breakdown in the digestive tract, and absorption mechanisms of macronutrients (carbohydrates and fibers, lipids, proteins). Energy production within cells. Integration and regulation of metabolism between tissues and organs. Energy requirements and body composition, the impact of physical activity. Regulation of water, electrolytes, appetite, and thirst. The need for micronutrients (vitamins, minerals), peculiarities of absorption, and their presence in food.

During the course, students will give a presentation on a current nutrition-related topic.
In practical sessions, two practical tasks are conducted based on the instructor's choice: determining the fatty acid composition of a food item; determining the caffeine content in tea or measuring the rate of digestive enzyme activity.

Kursuse koondhinne koosneb kolmest osast: kontrolltööd ja/või eksamitöö (hindelised), ettekanne (arvestuslik) ja praktikumid (arvestuslik). Kursusel viiakse läbi kaks kontrolltööd, osalemine on vabatahtlik. Kursuse hinne on võimalik saada kontrolltööde positiivsete hinnete alusel kui ettekanne ja praktikumid on arvestatud.

The final grade for the course consists of three components: tests and/or exam (graded), presentation (pass/fail), and practical sessions (pass/fail). Two tests are conducted during the course, and participation is optional. The course grade can be obtained based on the positive grades from the tests, provided that the presentation and practical sessions have been assessed.
