Õpetada kasutama materjali ja energia vahetuse protsesside teoreetilisi aluseid mõistmaks toidu töötlemis protsesside väljatöötamise, arenduse ja läbiviimise tehnilisi aspekte ning anda praktiline kogemus nende protsesside teostamisel ja vastavate seadmete kasutamisel.

Lühivaade arengutendentsidest toidu töötlemisettevõtetes. Toidu töötlemisprotsesside teostamise alused: materjali ja energia bilansid, voolamisteooria, soojus- ja massiülekanne. Toidu jahutus- ja külmutusprotsessid. Mehhaanilised ja krüogeensed külmutusseadmed. Termilise töötlemise protsessid: soojusvahetus. Ahjud, grillid, röstrid, autoklaavid. Transpordi protsessid: hüdraulilised, pneumaatilised, mehhaanilised. Pumbad, ventilaatorid. Peenendus- ja segamisprotsessid. Segajad, lõikeseadmed, purustid, veskid, homogenisaatorid.
Lahutus- ja rafineerimisprotsessid. Sõelad, tsüklonid, tsentrifuugid, filtratsiooniseadmed, kristallisaatorid, ekstraktsiooni seadmed. Kontsentreerimis ja kuivatusprotsessid. Vaakuumaurutid, õhkkuivatid, aurutid, lüofilisaatorid ja piiskkuivatid. Dekontamineerimis- ja puhastusprotsessid. Pastörisaatorid, sterilisaatorid, kiiritusseadmed. Puhastusagendid ja CIP-süsteemid. Massiülekanne fermentatsiooni protsessides. Fermenterid ja kääritus/laagerdus tankid, biopuhastid ja komposterid. Kliima kontrolli süsteemid. Konditsioneerid, soojuspumbad, õhufiltrid. Protsesside juhtimissüsteemid. Protsesside mõõte- ja täitevseadmed.

Introduction into course. Overview on main trends in food processing units. Principles of food processing: mass, energy and heat balance, fluid flow theory, heat and mass transfer theory, and exchange. Heat transfer applications: heat exchangers, mechanical refrigeration circuit, refrigeration evaporators, freezers, grills, ovens, autoclaves. Fluid flow applications: liquid pumps, and pneumatic transport. Size reduction applications: jaw and gyratory crushers; hammer and plate mill grinders. Mixing: propeller mixers, ribbon blender, double-cone mixer and kneader. Mechanical separation processes: sedimentation plant, cyclone separation, liquid and solid centrifuges, filtration, ultrafiltration, reversed osmosis systems. Extraction and crystallization processes and systems. Evaporation and drying: vacuum evaporators, freeze dryers, spray driers. Decontamination processes: pasteurizers, sterilizers, cleaning in place (CIP) systems. Fermentation processes: fermentation tanks, cultivation devices, waste water treatment plants. Air cleaning and conditioning: heat and moisture exchangers, heat pumps and air filters. Process control: measurement and control equipment.
