Õpetada mõistma toidutootmise põhiteguritest ja –näitajatest. Õpetada kasutama andmebaase ja teaduskirjandust toiduga kindlustatuse, selle parandamise võimaluste ning erinevate tootmis- ja tarnestrateegiate jätkusuutlikkuse ning keskkonnamõjude hindamiseks. Analüüsida võimalusi toidutootmise negatiivse mõju vähendamiseks keskkonnale.

Give an understanding on critical factors and indices related to food production and distribution. Teach students to use databases and scientific literature to evaluate the situation in food security and sustainability of different food production and processing strategies. Analyze impact of food production chain on environment.

Tudengid oskavad analüüsida toitlustusolukorda Maal ja selle tendentse tulevikus, põllumajanduse ja toidutootmise industrialiseerimise mõju nii Maa elanikkonna toiduga kindlustatusele, toidu kvaliteedile ja keskkonnale. Tunnevad põhilisi toidutoorme kategooriaid, nende tootmise lokalisatsiooni, mahte ja tendentse ning nende bioloogilist ja koostise eripära. Suudavad välja pakkuda lahendusi toidu tootmise/tarbimise keskkonnamõjude vähendamiseks.

Students are able to analyses the nutritional situation: those trends for future, impact of industrialization of agriculture and food processing on food security, quality, safety and environment. Know the main categories food materials, those production volumes, localization, trends and are aware of those biological, technological and nutritional peculiarities. Able to make suggestions to reduce the impact of food production and consumption on environment.

Eluks sobilike tingimuste ja elu teke Maal. Toiduks ja söödaks kasutatava primaarproduktsiooni tõstmise võimalused Maal. Primaarproduktsiooni sekundaarproduktsiooniks muutumise efektiivsus ja seda mõjutavad tegurid. Põhilised põllumajandussaaduste kategooriad, nende tootmise mahud ja tendentsid, maailmas. Vesi ja selle ressursside jätkusuutlik kasutamine. Toidu jahutamise, külmutamise, termilise töötlemise, hapendamise, rafineerimiseprotsesside mõju toitainete saagisele ning kvaliteedile: toitainete kaole, bioloogilisele kättesaadavusele, maitseomadustele ja ohutusele. Toidu pakendamisega seotud keskkonnamõjud ja nende ohjamine. Toitumisega seotud keskkonnamõjud: toidujääkide ja väljaheidete utiliseerimine ja taaskasutus. Mahetootmine ja selle jätkusuutlikkus. Safety issues and environmental impacts of related to food packaging. Environmental issues related to human nutrition. Utilization, re utilization of food waste products and faces. Organic farming: sustainability of production and impact on food security worldwide. Food trade and help: impact on food security and social development of developing countries.
