Sissejuhatus toidutehnoloogiasse, toiduteaduse ajalugu. Toidu andmebaasid. Massi ja energia jäävuse ning termodünaamika seadused kui toidutehnoloogia ja tervist toetava toitumise alus. Toidu tootmine ja sellega kindlustatus maailmas. Toit ja toitumissoovitused. Toidu säilitamine ja konserveerimine. Piima-, liha, teravilja-, köögivilja-, kääritus- ja õlitehnoloogiate eripära lühitutvustus. Toidu kvaliteet, ohutus, seadusandlus, märgistus. Toidu analüüs, selle eripära. Maitse ja aroom.

Introduction to food technology, history of food science. Food databases. The laws of mass and energy conservation and thermodynamics as the basis of food technology and health-promoting nutrition. Food production and security in the world. Food and healthy diet recommendations. Food preservation. Introduction to the dairy, meat, cereals, vegetables, fermentation and oil technologies. Food quality, safety, legislation, labeling. Food analysis, its peculiarities. Taste and aroma.
